Dear Andrew,
In AVC the available fields for prediction are assigned to different reference indices according to section 8.2.4. The proper field for prediction is then indicated through the use of the appropriate ref_idx_lX for each sub macroblock. I would strongly suggest carefully studying section 8.2.4 and the appropriate subsections to understand how field pictures are organized and considered for prediction.

For AVC, I am trying to identify (with little success so far) the semantic equivalent of what in MPEG2 was called motion_vector_field_select. How is this accomplished in AVC?
